Corn and Black Bean Salad

Ingredients
- 1 C sweet corn, blanched
- 1 C black beans, cooked and drained
- 1 T red wine vinegar
- 1 T olive oil
- 1/2 t dried mustard
- 1 t jalapeno pepper, fine dice
Instructions
- Whisk together the vinegar, oil and mustard until emulsified. Stir in the jalapeno and season to taste. Let sit to blend flavors.
- Combine the corn and beans, dress, plate and serve.
